brewing and aging
We pay special attention to the picking of the Gray Pinot, when it is fully mature, but not too mature, it retains the fresh taste that it is not often available in the Balda area. Grapes selected by grain are aged for 11 months in a 225-liter French oak barrel, and aged in a 6-month bottle. 30% of them are aged in new oak barrels, 70% of new oak barrels in 2-3 years.
Color: Golden yellow, slightly mild onion skin tone
Fragrance: The aroma is delicate and fruity, exuding the taste of apple and grapefruit peel, the aroma of hazelnut and floral and the typical spicy taste of Pinot Gris. This is a very rare Alsace style that is very rare in the Balda area, which is very individual.
Taste: The wine is full and firm, with oily texture and a good sense of balance.
Meal advice: Match it with a dish with a soup – such as a dumpling, seafood risotto, or chicken.
